Buffalo chicken pizza
When I was in the states TWO years ago (the fact it was so long ago is so depressing), I went to California Pizza Kitchen in Boston with a mate, and had buffalo chicken pizza. Earlier in the trip I’d had buffalo chicken wings at Hooters. As ya do.
So, again, as ya do, two years later I ordered a bottle of Franks Hot Sauce (the US folks tell me this is the best) and made my own buffalo chicken pizza.
It went a little something like this.

Step 1, rather irresponsibly, drink the better part of a bottle and a half of bubbly over a day spent between the kitchen and the couch. It’s how I relax. What of it?
Then, make pizza!
Buffalo chicken pizza
Pizza base (use your fav recipe or use this one)
1 chicken breast, cooked and sliced
1/4 cup hot sauce
1 T unsalted butter
1/2 t brown sugar
1 T greek yoghurt
1 T mayo
pinch of sugar
pinch of garlic powder
Cheese, grated
Half a red onionĀ
Make your pizza base, or cheat like me and use a store bought one. Sometimes it’s ok to cheat, honest.
Dice up your red onion and set aside.
This is no ordinary pizza - none of that red tomato sauce stuff here. This pizza has a base of white sauce (shock! horror!). It’s actually quite tasty. To make the white sauce, mix the yoghurt, mayo, sugar, garlic powder and a bit of salt and pepper in a bowl (oooh, did you notice I didn’t put salt and pepper on the ingredient list? The scandal).

Spread your white sauce over your pizza base. Doesn’t that look nice?
Time to cook your toppings! Actually, you could probably do this before the previous step. Things are fluid around here, we do things as we want to. Embrace it. Anywho, to make your buffalo chicken (excite!) put the butter, sugar and hot sauce in a small pot, and heat that shizz up! Once hot, mix in the chicken. Bet that looks good now. Don’t put your face over the pot, cos you’ll breath in some of the hot sauce and that’s not fun. Trust me. Speaking of, if you like a hotter buffalo sauce, add more hot sauce. This one is pretty mild. And I may have cheated and used less cos I was scared. Totally not scared.

Once cooked, plop that chicken on top of the white sauced pizza base, then top with the cheese and the red onion.

Into the oven it goes. Leave it there for about 10 minutes. I recommend using a pizza stone like the other cool kids. It makes it pretty awesome.
Once it’s out of the oven, roll it up and shove it in your gob. Or, slice it and eat with a knife and fork like a lady. I won’t judge.
Enjoy! But don’t eat the whole lot. That’s silly.
