Chicken and people I don’t know
There are these women. They are awesome. I don’t actually know them though. Through the wonders of modern technology, I feel like I kinda sorta know them, and that I know too much about them given I don’t actually know them, y’know?
I get social media. I used to work in a role that meant I always had one eye on it at all times. Though I use it less frequently these days, and mostly to talk crap to people who aren’t even listening, it works for me.
Anywho, it seems to be a a trend among some of the people I follow on twitter lately to be doing the dukan diet. I’m intrigued (but not enough to put in the effort to actually do it) - I’ll continue on my “somewhat healthy with more exercise than I used to do” routine for a bit longer yet.
For the first week - the ‘attack’ phase where you can only eat low fat protein (I think), they kept posting these recipes that actually sounded good. And then they said they were tasty. Including this Portugese Chicken.
Sold.

Portugese chicken
4 skinless chicken breasts or 8 skinless drumsticks (I used 6 thighs for two of us)
Juice of half a lemon
Juice of half a lime
2 cloves garlic, chopped (I used 3)
2 t crushed chilli
1 t paprika
1 t oregano
1/4 c cider vinegar
Salt & pepper
Parsley (I omitted this due to forgetting to buy it…)
Place the chicken, chilli, garlic, lemon juice, paprika, oregano, vinegar and salt and pepper in a bowl and mix! Leave to marinate overnight (I only marinated for half an hour and it was still delicious - just mix every now and then).
Cook the chicken! BBQ, oven or whatever you want. I used a non stick frying pan for about 6-10 minutes on each side, and then plonked in the oven while I waited for the rest of dinner to be ready.
Once cooked, squeeze the lime juice over and sprinkle with parsley.
Since I’m not doing dukan I can eat all sorts of things, so paired it with too large a portion of vaguely healthy homemade fries and a salad.

I can see this one being added to the regular rotation!
